Tabouleh With Beetroot
For 6 people. Preparation time: 20 min. Waiting time: 60 min.
Ingredients
- 2 cups of couscous
- 2 beetroots -cooked
- 2 lemons
- 2 oranges
- ½ pepper
- 1 tomato
- 2 handfuls of raisins
- 2 tbsp olive oil
- 10 gooseberries or 2-3 figs sliced quite finely
Method
- Using a juicer pass the beetroot and then mix in the juice of 1 lemon and 1 of the oranges
- In a large bowl mix the above with the couscous and leave to one side for about 30 mins
- Slice the other orange and lemon in halves — juice one half of each fruit and with the remaining halves chop into small dice
- To the juice of the orange and lemon halves add the raisins and leave to marinate for a little while
- When the couscous has swollen, add the diced orange, lemon, pepper, tomato, raisins and season to taste
- Top with the gooseberries or the sliced figs
- Leave in the fridge for at least 30 mins
