Serves 4. Cooking time: 40 min.


  • 2 medium fennel bulbs
  • 25 g butter
  • 2 tbsp honey
  • Water


  1. Trim some of the root off the fennel.
  2. Slice the bulbs into 1 cm slices and place in a single layer into a ovenproof dish.
  3. Add the butter, honey and enough water to barely cover the fennel and cover with either a lid or some foil.
  4. Cook in a low heated oven for about 30 mins and then remove the foil and cook for a further 10 mins until tender
