Pesto
For 2 people
Ingredients
- 50g fresh basil leaves
- 2 fat cloves of garlic
- 1 tablespoon pine kernels — dry toasted in a frying pan
- 6/ 8 tablespoon of good olive oil (only add 6 to start with)
- 50g freshly grated parmesan
- 1 pinch of salt
Method
- If using a blender add all the ingredients together and blend until you have a sooth consistency — You may need to add a little more oil
- If I am keeping this for the next few days I put in a bowl and top with a little more olive oil and parmesan.
