Broad bean salad with goats cheese
Cooking time: 20 min
Ingredients
- 1 goats cheese log shaped
- 1 cos lettuce finely sliced
- 600 g broad beans fresh or frozen
- Vinaigrette made with balsamic vinegar
Method
- Boil a pan of water add the beans and leave to cook for about 5 mins until they are tender then drain
- Cut the goats cheese into 1cm slices and place on a baking tray lined with foil
- Make the vinaigrette
- Light the grill and put the tray of goats cheese under it until it's slightly melted and browned then remove from the heat
- To serve put the lettuce on a serving dish cover with the beans and then gently place the cheese on top — pour over the vinaigrette.
