• 4 egg yolks
  • 1 teaspoon of mustard (optional)
  • 650 ml sunflower or groundnut oil
  • ½ lemon
  • Salt & pepper


  1. Take the egg out of the fridge about 30 mins in advance so it's the same temperature as the oil
  2. In a large bowl mix the egg yolk and the mustard and season with salt and pepper
  3. Add the oil slowly whilst continuously mixing the egg (this would be easier if you had a food processor)
  4. Check seasoning

Tartare sauce - add 2tbs capers and gherkins, drained and chopped, fresh parsley, squeeze of lemon and freshly ground pepper

Aoli – add in 2-3 fat cloves of crushed garlic to stage 2, and leave out the mustard
