British Pea Soup

Ingredients
- 1 medium red onion, chopped
- 250 g frozen peas
- 500 ml stock
- ½ tsp dried rosemary
- Salt and pepper
- Crème fraiche - optional
- Flaked almonds – optional
Method
- Sweat the chopped onion until tender, then add teh rosemary, stir and leave to cook for a couple of minutes
- Add the peas, and add the stock to cover ( you may not need all of it)
- Bring to the boil and cook for 3 -4 minutes, until the peas are tender
- Using a handheld blender, blitz the soup until it’s reached the texture you like
- If using the almonds, dry roast them in a pan
- Put a dollop of the crème fraiche on each bowl and add the almonds
Serve with crusty bread.
NB As an alternative you could add some pan fried pancetta lardons.
