Lettuce and Pea Soup

For 2 people. Cooking time: 20 min.


  • Medium onion, chopped
  • A little butter & olive oil
  • 1 large cos & 4 baby gems
  • 250g frozen peas
  • 1L vegetable stock
  • 3-4 sprigs fresh thyme
  • Salt and pepper
  • Crème fraiche


  1. Sweat the onion in the oil and butter until soft, then add the peas and lettuce. Pour over the stock, and add 2 sprigs of thyme, bring to the boil and simmer gently for 4-6 minutes until the peas are tender.
  2. Remove from the heat and then blend the soup in a liquidiser.
  3. Check the seasoning.
  4. To serve re — heat and add a dollop of crème fraiche and the remaining thyme leaves as a garnish.
