Carrot Fricassee

Serves 4. Cooking time: 1 hour.


  • 0.5 kg carrots
  • 500 g baby onions
  • 1 bay leaf
  • 250 g bacon
  • 3 tablespoons olive oil
  • Salt & pepper


  1. Slice the carrots into 1-2 cm rounds —if you can't get baby onions roughly chop them up.
  2. Heat the oil in a heavy based pan and add the vegetables and bay leaf, season and leave uncovered for roughly 20 mins.
  3. Cut the bacon into small strips (lardons) and blanch them in a pot of boiling water for about 5 mins, drain and then add to the vegetables, put the lid on the pan and leave to cook for a further 20 mins —check from time to time
