Serves 4. Cooking time: 1 hour.
- 0.5 kg carrots
- 500 g baby onions
- 1 bay leaf
- 250 g bacon
- 3 tablespoons olive oil
- Salt & pepper
- Slice the carrots into 1-2 cm rounds —if you can't get baby onions roughly chop them up.
- Heat the oil in a heavy based pan and add the vegetables and bay leaf, season and leave uncovered for roughly 20 mins.
- Cut the bacon into small strips (lardons) and blanch them in a pot of boiling water for about 5 mins, drain and then add to the vegetables, put the lid on the pan and leave to cook for a further 20 mins —check from time to time
