Chicken Stock
Ingredients
- 1 chicken carcass
- 1 onion
- 1 large carrots
- 1 stalk celery
- 3 large sprigs parsley
- 2 sprigs thyme
- 1 bay leaf
- 1 tsp coarse salt
- 10 peppercorns
- 2 litres water (or enough to cover the chicken carcass)
Method
- Place all ingredients in a stockpot or any large pot, bring to boil and cook gently for 2-3 hours, skimming regularly.
- Strain allow to cool and either keep an airtight container in the fridge or freeze.
