Chicken Stock

Ingredients

  • 1 chicken carcass
  • 1 onion
  • 1 large carrots
  • 1 stalk celery
  • 3 large sprigs parsley
  • 2 sprigs thyme
  • 1 bay leaf
  • 1 tsp coarse salt
  • 10 peppercorns
  • 2 litres water (or enough to cover the chicken carcass)

Method

  1. Place all ingredients in a stockpot or any large pot, bring to boil and cook gently for 2-3 hours, skimming regularly.
  2. Strain allow to cool and either keep an airtight container in the fridge or freeze.
