Strawberry Mousse


  • 100ml double cream, whipped until soft peaks appear when the whisk is removed
  • 100g crème fraiche
  • 1 tbsp icing sugar
  • 50g fresh strawberries hulled and chopped —save a couple to slice finely and use as a decoration


  1. Place all of the ingredients, except the icing sugar, into a bowl and mix together well.
  2. Spoon into 4 small ramekins. Decorate with the slices of strawberries
  3. Leave to chill for a couple of hours.
