For 2 people
- 2 peppers, de-seeded and cut into large slices
- 4 cloves garlic, sliced
- Olive oil
- Fresh thyme
- Preheat an oven to 220C.
- Put the peppers on to a roasting tray. Drizzle with olive oil and scatter over the garlic and thyme.
- Cook for 30 minutes. Serve either hot or cold. If you want you could always add a slice of gorgonzola cheese
