Roasted Peppers

For 2 people


  • 2 peppers, de-seeded and cut into large slices
  • 4 cloves garlic, sliced
  • Olive oil
  • Fresh thyme


  1. Preheat an oven to 220C.
  2. Put the peppers on to a roasting tray. Drizzle with olive oil and scatter over the garlic and thyme.
  3. Cook for 30 minutes. Serve either hot or cold. If you want you could always add a slice of gorgonzola cheese
