For 2 people


  • 50g fresh basil leaves
  • 2 fat cloves of garlic
  • 1 tablespoon pine kernels — dry toasted in a frying pan
  • 6/ 8 tablespoon of good olive oil (only add 6 to start with)
  • 50g freshly grated parmesan
  • 1 pinch of salt


  1. If using a blender add all the ingredients together and blend until you have a sooth consistency — You may need to add a little more oil
  2. If I am keeping this for the next few days I put in a bowl and top with a little more olive oil and parmesan.
