Cod With Chorizo
For 2 people. Cooking time: 20 min.
- 2 pieces of cod (or any other white fish)
- 6 slices chorizo cut into thin strips
- 6 basil leaves
- 8 cherry tomatoes
- Olive oil
- A baking dish
- Pre heat oven to 150C
- Lay the fish into the pan with the chorizo and tomatoes
- Tear the basil leaves and place on top of the fish
- Season and drizzle some oil over everything
- Put in oven and will be ready in about 20 minutes — the fish will have turned opaque in colour.
- Serve with steamed potatoes and salad.
