Ingredients
2 cups of couscous
2 beetroots -cooked
2 lemons
2 oranges
½ pepper
1 tomato
2 handfuls of raisins
2 tbsp olive oil
10 gooseberries or 2-3 figs sliced quite finely
Method
Using a juicer pass the beetroot and then mix in the juice of 1 lemon and 1 of the oranges
In a large bowl mix the above with the couscous and leave to one side for about 30 mins
Slice the other orange and lemon in halves – juice one half of each fruit and with the remaining halves chop into small dice
To the juice of the orange and lemon halves add the raisins and leave to marinate for a little while
When the couscous has swollen, add the diced orange, lemon, pepper, tomato, raisins and season to taste
Top with the gooseberries or the sliced figs
Leave in the fridge for at least 30 mins
